Sometimes all a steak needs is a little salt and maybe some pepper, but sometimes, especially on the barbecue you will want a nice bark and plenty of heat. Chilli, black pepper, mustard, onion, and garlic with a little sugar to bring them all together nicely. Add a little of your favourite salt and reverse sear on a flaming hot grill. Then, eat it rare so that the juices and the spices blend together. Magnificent.
