Thanks for the follow up. Delivery was perfect. I find the rib eye quite tough. I’ve cooked a lot of steak and yes I season and bring to room temp and dont overcook it but the meat is tough. The steaks look great and the meat looks decently marbled. But each one I cook is tough to chew on. Thanks

Good but a bit thin

go with the 12oz a ribeye steak should be at a minimum 1" thick in order to cook properly. Its VERY hard to find a properly cut ribeye in Irealnd and the 12oz will be just a smidge thin

I really wish they would offer a thickness option because that is what drives how it cooks and will have a rough common weight that is 12-13 OZ will be about 1" for example a 1.5" which is a MUCH better cut will be about 16 OZ

That is a lot of meat you don't have to feed 1 person per steak :) though you of course can

This steak does best when it's cooked on high heat such as an iron skillet for just a few min, it should be caramelized on the outside to the point the fat has started to render but the inside should still be very rare this will give it a buttery smooth texture and a rich flavour with nothing but salt and paper needed ... but to do that you NEED at minimal 1" thick preferably closer to 1.5
